Preheat grill to medium high heat. Brush 1/4 cup
extra virgin olive oil on 1 eggplant (cut into 1/2” slices),
1 yellow pepper (quartered lengthwise), 1 small red
onion (cut into 4 slices), and 4 shitake mushrooms
(cut into 1/2” slices). Season vegetables with salt and
pepper to taste. Cook vegetables until tender and
grill marks form. Set aside.
Slice 4 ciabatta buns in half, brush lightly with oil,
and grill on both sides. Combine 1/2 cup Wildly
Delicious Roasted Red Pepper & Feta Dip Mix &
Spread with 1/2 cup cream cheese.
To assemble, spread both sides of the ciabatta buns
with cream cheese mixture and then top with grilled
vegetables. |
