Blackcurrant & Shallot Compote |

Often stereotyped in food, we saw untapped
potential in this underestimated fruit. Drawing on
the traditional French application of the
blackcurrant as Cassis we undertook the
challenge of creating a compote with both fruity
and savoury notes. Pairing shallots and a splash
of Cassis with the currents creates a depth of
flavour that transcends the exotic black purple
hue of this compelling compote. |
