Tart Cherry and Almond Compote
  A classical combination of tart Montmorency cherries mingling with sliced roasted almonds and red wine strikes the perfect balance between sweet and tart.
     
Pear & Ginger Compote with roasted hazelnuts
  This compote boasts an absolutely spectacular combination of firm pears, crystallized ginger and crunchy roasted hazelnuts. Serving this compote with aged white cheddar is our version of gastronomic nirvana but don’t let your imagination stop there. Equally splendid over warm Brie or spread on a toasted baguette for breakfast.  
     
Blackcurrant & Shallot Compote
  Often stereotyped in food, we saw untapped potential in this underestimated fruit. Drawing on the traditional French application of the blackcurrant as Cassis we undertook the challenge of creating a compote with both fruity and savoury notes. Pairing shallots and a splash of Cassis with the currents creates a depth of flavour that transcends the exotic black purple hue of this compelling compote.
